What's with the: Forest Tartare (deer, hemlock, clotted cream & lumberjack crackers) $13? Hemlock?

    Hemlock the tree isn't poisonous. You can use the needles in an infusion, which is probably what Strip T's is doing.

    It's herbaceous hemlock that is poisonous

      I thought this was going to be a secret ingredient about which you had to ask a series of questions to ascertain what it was.

        aaah i went the other route! Was thinking more along the lines of the elbulli spice dish- ingredients suspended in gel, then they say "well, what do you think it is?" and let you discuss at the table....

          I've had this dish twice. First time it was called "Forest Sushi" and was made with beef, second time was the "Forest Tartare" made with venison. Both times it was friggin' delicious.
