Which book would you recommend for Bread Machine Recipes ?
I am looking for a cookbook specifically for baking in bread machines. I recently got a Zoji Breadmaker and have been trying out the various recipes in the booklet, with some success. I bought the "Bread Machine Magic" book and have tried out a few with some okay and some not so good results.
I was wondering if you have any favorite go-to cookbook when it comes to making breads. I am interested specially in breads and savory snacks like rusks and crackers, not so much in cakes.
Do you use the baking cycle in the machine or use the oven instead ? Thanks for sharing !
"Artisan Baking" by Maggie Glezer is especially clear and understandable. She has a good section on the differences among various flours and is especially good on rye breads and sourdough.
"Rustic European Breads from your Bread Machine" by Linda West Eckhart and Diana Collingwood Butts is my favorite bread machine book. Some are baked in the bread machine, but most are shaped and baked in the oven. It's an older book - 1995 - and is out of print. There are used copies available. Some of the recipes have you make a starter first, so some of them are a bit more complicated. Not difficult, but takes planning ahead.
The recipes are in the following categories:
Basic Wheat Breads
Buns, Bagels, Baguettes, Breadsticks, Brioche, and Rolls.
Sweet Holiday and Dessert Breads.
There weren't any listings for rusks or crackers, though.
I haven't looked at what's currently available in bread machine cookbooks in a long time. Your post made me curious, so I checked them out. Although I've not used "Bread Lover's Bread Machine Cookbook" by Beth Hensperger, I have six of her other books. "Best Quick Breads" and "Bread Bible" by her are two of my favorite bread cookbooks. I bet her "Bread Lover's..." book would be good, too.
