1-3 day technique oriented cooking classes Emilia Romagna
Can't find a small, decent 1-3 day cooking course/class that is 'hands on' and focuses on technique more than recipe in the Bologna/Parma/Moderna area. Most seem to be demonstration classes that are designed as much for entertainment as for content. Not that I am adverse to entertainment....Al Knoll

Fully hands on, in Bologna. Generally only 1/2 day class, but given enough notice, they will tailor to suit your needs. We made bolognese, sage butter sauce and a couple other easy sauces. Main focus was pasta, from the beginning we made tortellini, tortelloni (including fillings), tagliatelle, and gnocchi. We had 4 students and 2 instructors.
I had inquired about a full day class and they gave me a list of items to choose from to make.
