I have been reading old cookbooks from the early 20th and late 19th centuries (I got a kindle for Christmas...Ok?).
Anyway, one of these cookbooks suggested adding peas to oatmeal as a poor man's dish. If they could add peas in 1912, why can't we add other green veggies? Kale is very fashionable today. Add Kale. If you could add kale... well spinach will work.
If you are gonna add peas I think you could throw in some mushrooms, too.
Oatmeal is used as a breakfast food, why can't we add pieces of cooked sausage or hamburger meat?
Well, I guess you have had a glimpse of how my mind works. When i see a recipe, I always think of variations.

Ooh.. how about smearing some oatmeal on a piece of toast and then adding a poached or fried egg on top of that?
