James Beard and Alton Brown both have oatmeal breads using cooked oatmeal. I have made and liked the Beard one many times.

Speaking of bread, sometimes when I make whole wheat bread I coat the exterior with cooked oatmeal for the texture.

I have been reading old cookbooks from the early 20th and late 19th centuries (I got a kindle for Christmas...Ok?).

Anyway, one of these cookbooks suggested adding peas to oatmeal as a poor man's dish. If they could add peas in 1912, why can't we add other green veggies? Kale is very fashionable today. Add Kale. If you could add kale... well spinach will work.

If you are gonna add peas I think you could throw in some mushrooms, too.

Oatmeal is used as a breakfast food, why can't we add pieces of cooked sausage or hamburger meat?

Well, I guess you have had a glimpse of how my mind works. When i see a recipe, I always think of variations.

        Good luck.

Ooh.. how about smearing some oatmeal on a piece of toast and then adding a poached or fried egg on top of that?

          Add it to pancake batter.

Have you tried frying it? This works best if you stored the warm oatmeal in a rectangular contain and let it chill in the fridge. slice and fry in a nonstick skillet.

You could add curry powder and salt. I've done this with steel cut oats and it was delicious, sort of like curry risotto. If you have rolled oats, maybe add some veggies as well to change up the texture.
