Recommended vegetarian slow cooker cookbook and/or your favorite tried and true recipes?
Hi everyone-I'm getting a crockpot soon to try to make cooking during the week less of a hassle. I'm hoping for some great vegetarian recipes to make in it since I associate them with large hunks of tough meat. I'd love a gourmet cookbook or two, or even just some of your favorite recipes.
Thanks!

This author has a few slow cooker Indian cookbooks out. I have read 2 of hers and they are great! http://www.amazon.com/The-Indian-Slow...

I've been loving Robin Robertson's Fresh from the Vegan Slow Cooker. I highly recommend it!

re: IndyGirl
Well, it's my husband's crock pot. It's one of those old-school ceramic dealies. It's round, about 5 to 6 quarts with a very seventies motif! He bought years ago at a yard sale and it's still going strong.
I'm in the market for an oval myself as a back-up b/c of the recipes in the book specify an oval-shaped one (the pizza recipe, a strata recipe, a lasagne recipe, etc.) Up here, Canadian Tire seems to have crock pots on sale all the time!

I can't find the one I usually use, but I've had better luck with the basic ones like this: http://www.amazon.com/Crock-Pot-SCV40...
The fancy ones with extra times and settings haven't worked well for me. I use an appliance timer with mine.
