Sweet Potato Pie by Sky Ranch (Santa Rosa and Cloverdale)

One of the nicest sweet potato pies I’ve had in ages is made by La Reva Myles of Sky Ranch Culinary Events of Cloverdale. She shares a booth at the Saturday morning Santa Rosa Original Certified Farmers Market with Chef Joe of Green Grocer. Made with fresh rather than canned yams, the sweet potato filling is denser, more flavor packed and less watery. The very flaky and light crust is shortening-based with some butter. Par-baking before adding the filling keeps the bottom crust from getting soggy.
Ms. Myles is generous with samples before buying. I also tried a meringue-topped lemon icebox pie made with fruit from her tree. Also good but just a notch sweeter and less tart than I wanted.
