Powdered Egg Whites / Dried Egg Whites
in the baking section with the flours. If not there, Wilton makes meringue powder (its other name) -- anywhere cake supplies are sold.
But given their lackluster performance in other uses, there is no way I would try to make macarons with them -- powdered egg whites give you a rather flaccid meringue that will not give you the right results.
Barring a bulk food store you can get them at gourmet warehouse on east Hastings. As for making macarons with them, its entirely possible (we use them sometimes at the restaurant to make macarons) but being a pasteurized product you just have to know how to deal with them.
doesn't Michaels (the big box craft store - there's one in Park Royal, another near Park & Tilford, another one on Alberni near Coast restaurant) have that Wilton line (meringue powder)?
maybe Wm Sonoma on S Granville?
i have never used powdered egg whites for macaroons (1 always real egg whites at room temp w/ some cream of tartar powder) - so i did a quick google - here is one interesting thread http://www.taste.com.au/forums/viewto...
