Paris in May - Current Itinerary

My husband and I looking forward to a long weekend in Paris this coming May. I've already spent countless hours on here creating and revising our eating itinerary. Due to the many choices and the number of restaurants closed on weekends/Monday, it's been a tough job! Here's are our current thoughts. Does this seem like a good mix? I'm really trying to get a little bit of everything in our short time. Spring, Chateaubriand and Le Regalade also really appeal but our time is so limited. Should I sub one or more of those in for something already on our list? Thanks for your help!

Friday: Lunch at Josephine Chez Dumonet; early drinks and a bite at Frenchie Bar a Vins (we're staying nearby and I figure we'll be jet lagged our first night)
Saturday: Lunch at Sola; dinner at Chez L'Ami Jean
Sunday: French Open. Casual dinner at Breizh Cafe
Monday: Lunch at Pierre Gagnaire; late dinner at Vivant Table

    But rather than the Breizh Cafe, since you won't get a table at Spring, eat in the Buvette downstairs or at their counter.
