One that I make often- arugula with roasted zucchini slices. Lemon vinaigrette top with feta or tofu to make a meal.
Romaine, cucumbers, radishes, green apple. Crispy rounds of goat cheese. Orange or grapefruit vinaigrette.
Mixed greens, pomegranate seeds, fennel. Honey mustard balsamic vinaigrette.

Log on to the New York Times and search for the series of articles Mark Bittman did over the years on vegetable salad. Things like shredding fresh asparagus. Or, since they're in season, here he is offering Ten Pear Salads http://www.nytimes.com/interactive/20...

Here's a nice article by Bttman 101 Simple Salads for the Season, and the "Related Articls" on the left side of the page lits a numbr of dressings.
