Beef lovers how rare is rare?

I like my beef 'blue'. Just a bit more cooked than raw.
When our university team would go on 'road trips' decades ago we'd take raw veal cutlets from the butcher and small cookie sheets. When we got to our rooms some of us would put the cutlets on cookie sheets and put them on the hot water radiators to warm up. Then we would eat the cutlets with our fingers. 'Good eats'.

  1. I've occasionally taken the blowtorch to the surface of some steaks. Paint with a little clarified butter first, then a couple of seconds with the torch.
