Savory Bourbon Sauce to go with Salmon?

My husband came back from a business trip raving about a dinner he had of grilled salmon served with a bourbon sauce. He said he could very much taste the bourbon and the sauce was very dark (that's pretty much all of his description of the sauce). I'd like to try to make something similar but I can't find much in the way of bourbon sauce recipes that would go with salmon. I'm finding a lor of bourbon marinades and dessert type sauces. I'm not looking for a heavy "bourbon taste" so much as just a nice flavorful sauce. Any ideas?

  1. I think that mustard (Dijon or spicy) brings out bourbon flavor very well. I've found that using honey instead of brown sugar in a bourbon sauce makes it less sweet - I would love to experiment with infused honeys. Perhaps infusing the honey with chipotle or paprika before using in the sauce would help create a deep flavor that won't mask the bourbon too much. Lemon juice would help keep it from being too heavy. Please report back! My husband loves bourbon - perhaps we can compare notes. Good luck!
