Apple juice substitute for apple cider in braise?

LJS Jan 5, 2013 11:38 AM

Local super market is all cleaned out of cider over holidays. I am making the Braised Pork with Apples from this month's Bon Appetit and have the apple cider vinegar and apple brandy et al. Do you think that unsweetened apple juice will do?

Yep -- it will be sweeter than the original, but it will work.

yes, it will be sweeter as sunshine said- You could cut with a little more vinegar to counter that.

Not any less or more sweeter (in my book) in such a recipe. Will not be noticed which it is (cider or juice) when put up against pork

there's more sugar in juice (even unsweetened) than in cider. In fermented cider, the yeasts have consumed some of the sugars and converted them to alcohol.

Thanks all: will adjust cider vinegar at end of recipe to compensate!
