Salad dressing that compliments curry dishes.
I am making a vegan curry vegetable soup for dinner, and am looking for a dressing that would compliment a simple green salad. We are not vegan so yogurt and the such are ok. Help...dinner ready in 20 min!
Puree some cilantro in the yogurt, add a little olive oil. Maybe some lemon.
Or make a tahini dressing, with or without yogurt.
Or a pureed cucumber, dill, onion and sour cream (or yogurt).
I'd suggest some yogurt with mint, salt, garlic and maybe a splash of olive oil. You could substitue cumin for the mint if you'd like.
Gujarati dressing: heat 1/4 cup of oil in a pot, add a tablespoon of black mustard seeds, stand back (it pops and sizzles), remove from heat, whisk in 2 tablespoons of lime juice, salt.
This is most likely going to sound unconventional & certainly not "gourmet", but I've always liked Thousand Island Dressing for salads accompanying curried dishes. "Marie's" is my hands-down favorite. It's creamy, yet tangy, & really seems to compliment curry dishes.
I steer away from yogurt/cilantro/tahini stuff for salads going with Indian dishes, since I always serve one or more yogurt raitas with them, & there's too much similarity.
