I have a recipe that calls for shredded cheese in a no flour cracker recipe. The ingredients are flax meal, almond flour, eggs, chickpea flour, oil, and cheese. But I wander if ricotta would work instead of the shredded cheese.
Ricotta might be too wet for the crackers. Try a cheddar, swiss, or parmesan instead.
