Can anyone identify specifically what the chart is posted on the wall behind Andre Soltner in the International Culinary Center kitchen ?

My guess it is a food or wine pairing chart, but it far more complicated than any I have seen before.

I think it might be a seasonality chart. The graduated ring around the edge suggests gradual change. Here is one chart for example:

There appears to be 12 pie shaped segments, some smaller than others, so that would make sense.
