Just my opinion but I found Jeff's version too tame, a bit on the dry side, and no casing - so no snap.

Cooked up the merguez tonight from Surfas OC with tomatoes, basil, and pasta. Outstanding merguez. Juicy, barely spicy, and delicious. Would definitely buy again.

I can't speak for your area but I've bought VERY good ones at Whole Foods in Reno. Made there. But we're sheep country so that may effect what individual stores make/carry.

I think Nicole's in South Pasadena and Monsieur Marcel in the 3rd and Fairfax FM have it. Surfas might have it too. You might look online for them - I just ordered some stuff they didn't have stocked in the store. I'll also ask my brother-in-law in OC, who is nuts for merguez. If there's any there he'll almost certainly know.

Normandie Bakery on Cochran (near Jefferson) used to sell the sausages. They offer a merguez sandwich so you might call them up. Since they've made it no parking on Jefferson I have a tough time finding decent nearby parking however.

He just got back to me, and says he's bought it from Nicole's. He did say that the guy they use as airport shuttle to LAX from Mission Viejo makes merguez on the side, dreams of having a merguez truck one day, and though he doesn't have the man's card you could try Googling "La Navette" airport shuttle.

Sorry, best I can do. Only other thing is that Les Delices is the brand Nicole carries, and you could look for that too.
