Dairy Free Scalloped Potato recipe
My brother and sister in law made a terrific scalloped potato dish for Christmas dinner this past weekend. It made me realize how much I miss scalloped potatoes... does anyone have a tried and true recipe using alternative cheeses?

Shoot, I have a great one from my aunt that's totally dairy free, but I won't be at home til Sunday. I will post it next week!

Here you go, it's pretty tasty, although there is no cheese at all involved. I'm sure you could easily add cheese alternatives though. I got this recipe from my aunt, so I don't have the source of it:
5 large potatoes (sliced thin)
3/4 c chopped onion
3 T butter (oye i guess there is dairy :-P)
1/4 c flour
1 3/4 c chicken broth
2 T mayonnaise
3/4 tsp salt
1/8 tsp pepper
paprikaPreheat oven to 325.
Grease 2 1/2 qt casserole dish. Layer the potatoes and onion. In sauce pan, melt butter, stir in flour and stir until smooth. Gradually add broth, mayo, salt and pepper. Cook and stir for 2 minutes or until thick and bubbly. Pour over potatoes and sprinkle with paprika. Cover and bake at 325 for 2 hours or until tender.
