Mexican wedding cookies

anyone have a recipe they'd like to share?

      I made a variation this year with lime zest and coconut, in addition to the usual ingredients. Very yummy! The recipe is in Fine Cooking.

        There are a few cookie recipes I turn to the old 1963 Betty Crocker Cooky Book for, and this is one of them. I use hazelnuts, but I'm from WA, so that's the natural choice for me.

          I've made a million of these over the years....5 ingredients....I do mine in the kitchenaid stand mixer, but used to do them by hand!

          cream 2 sticks of butter with 1/2 cup sugar, add 2 teaspoons vanilla. mix in two cups flour and work in, with hands if necessary, 2 cups chopped walnuts or pecans. pinch off pieces of dough & roll into one inch balls. place on cookie sheet ~ 1 inch apart. bake @ 325 for 20 minutes. cool then roll in confectioners sugar (oops, a 6th ingredient!). makes 4 dozen
