Did brioche rolls rise too much? Help!

I am making Dorie Greenspan's bubble-top brioche rolls: http://www.bonappetit.com/recipes/200...

Everything has been going great, but I left them out for 3 hours rather than just 1 to rise, and I think they may have risen too much. Is that possible?

Should I bake right away? Should I deflate them? I was planning on waiting 2 more hours before baking so they will be hot before dinner.

  1. Yes. It is possible. In the future, let them rise half way, then refrigerate. Remove them in time to let them finish rising then bake right before you need them.

    I would bake them immediately and hope for the best.
