Delay in making tortilla soup. How to freeze shredded chicken?
The plan was to make tortilla soup last night, so....
I made the stock.
I poached the chicken and shredded it/cut into bite size pieces. Then something happened and I wasn't able to continue with the soup last night and can't make it today either.
So I need to freeze the chicken, and stock. Should I freeze the chicken in some stock to cover, maybe?

Making stock and poaching chicken are tasks I often "do ahead". Chicken is frozen in heavy-duty plastic zip bags, pressed flat to minimize air space. Stock frozen separately (also in zip bags in *my* kitchen), generally in measured amounts. Freezing the ingredients separately gives me the best flexibility for future use.
If you choose rigid containers, rather than flexible bags, I would recommend adding enough stock to cover the chicken, as you have suggested.
