Melbourne: Looking for salmon roe in the sac

I'm a recent transplant to Melbourne (from San Francisco) and am eagerly seeking fresh salmon roe with which to make ikura.

I have tried at Victoria Market but to no avail. If anyone in this town sells the stuff, I'd very much appreciate hearing about it!

    Easy! There are two producers - a guy in the Yarra Valley (yarra valley salmon, oddly) and Huon in Tassie.

    Even though its not on the list, in terms of quality, I would have thought Tsukuji in South Yarra is probably your best bet (give them a ring though).

      It looks like those guys sell salmon caviar but that's not exactly what I'm looking for... I'm looking for the raw material for the caviar, which I will then make into caviar myself.

      The way I've been able to buy it before, it comes in entire egg bladders: basically big sacs of eggs that come out of the fish in a huge lump. It looks kind of like this: http://kyotofoodie.com/wp-content/upl... (though the roe in that picture has been marinated

        Ah, in which case I would ring tsukuji and Yarra Valley Salmon. They would be the only places i could think of for something so unusual

            I'd also try Conway's in Footscray. I'm sure with enough notice they would be able to do it for you.
