Melbourne: Looking for salmon roe in the sac
I'm a recent transplant to Melbourne (from San Francisco) and am eagerly seeking fresh salmon roe with which to make ikura.
I have tried at Victoria Market but to no avail. If anyone in this town sells the stuff, I'd very much appreciate hearing about it!

Easy! There are two producers - a guy in the Yarra Valley (yarra valley salmon, oddly) and Huon in Tassie.

Even though its not on the list, in terms of quality, I would have thought Tsukuji in South Yarra is probably your best bet (give them a ring though).

It looks like those guys sell salmon caviar but that's not exactly what I'm looking for... I'm looking for the raw material for the caviar, which I will then make into caviar myself.
