Olsen Farms makes a summer sausage that they sell year round. I believe it is all beef. They are at the farmers markets in Ballard and University Dist. http://www.olsenfarms.com/
Thanks for idea. I think I've talked to them before and they use pork casings for the beef. We're trying to work around for someone who doesn't eat pork, and it's hard to find non-pork casings...
