          French Macarons

          1. Meringues. I use 3 egg whites, 1 cup sugar, and 1 tsp each of vanilla, water, and vinegar. Have also used maple extract in place of the vanilla. Can make plain or with nuts. Makes about 40 meringues. I don't know what else gives so much for so little.

            1. macarons as well as macaroon ;)

i brush my biscotti (loaf) with egg white before the first bake...

              1. I love these dark chocolate pecan cookies, which are an adaptation of a Payard recipe and use four egg whites: http://chowhound.chow.com/topics/6519...

looks great- and I've got lots of pecans. Thank you!

                2. Coconut macaroons need egg white ... But not a lot in comparison to the bag of coconut and sweetened condensed milk.

Not really a cookie, but you can bake them in small molds and pretend, if all you are trying to do is use egg whites.
