low carb Christmas delights

What low carb delights are you making for Christmas dinner? I am going to cook ham, Brussels sprouts with chestnuts. Other stuff won't be so low carb, but I'll have low carb extras on the table, such as olives, pickled green beans, cherry tomatoes, celery sticks.

What are you planning for the feast?

    1. I make Thanksgiving, the SILs do Xmas, which I've done a couple of times, as a fully assimilated Jewish girl. :-)

      I think your menu sounds great, a lot like what my SIL serves on Xmas day.

        I'm making a roast beef (roast beast?), roasted Brussel sprouts and acorn squash, the ubiquitous cheese, olive and pickle tray aaaannnnnnnnddddd I think panna cotta.

        My aunt Dora always had stuffed celery on the table....the kids would devour it. The grown ups got shrimp for an appetizer. With all my cousins and our appetites if she had done shrimp for us it would have cost her a mint and hours and hours peeling and deveining.
