Sunny Spain, Paris, and Singapore Spice recipes needed

My daughter got me the above collection of spices, and I'm having a hard time finding recipes for them. Any favorites you can share? She's vegetarian so I'd especially like recipes that I can make for her, but any would be appreciated.
