Quail, Turtle, and Quaility Rib Roast

Planning an amazing Holiday dinner party for the weekend and I think I want to try my hand at some recipies from John Besh's cookbook.
Where are the best places in NOLA, Jefferson, St. Tammany, to buy good cuts of beef (Rib Roast), and where can I find Quail and turtle meat?

  1. It's worth calling Cleaver & Co. (http://cleaverand.co) -- top notch butchers selling locally raised meat.

    1. USDA prime beef :
      Robert Fresh Market on Robert E. Lee is my preference followed by:
      Dorignac's
      Langenstein's

      Prime is also available :
      Rouses the least expensive but generally not worth the savings. Flavor can be hit or miss

      Rare Cuts The priciest but not necessarily the best This includes the dry aged

      All the above plus WF should have quail.
      Turtle is usually frozen and available at Rouses, Langenstein's, and probably Dorignac's.
