When I was in Germany in the spring it was 'spargel' season (white asparagus). They were usually only prepared 2 ways, gently steamed as above with hollandaise or in soup. The soup was the most amazing I have had. http://germanfood.about.com/od/soupsa...
I haven't tried it myself because the white asparagus looks so bad anytime it comes into my grocery store, and I assume at this time of year it has to be coming from the southern hemisphere, since it is a spring vegetable.
