White Asparagus

I just picked up some white asparagus for the first time. Any suggestions on a simple recipe? I believe I've only had them steamed with a lemon butter sauce or with a vinagrette. Thank you!

  1. Gently steamed and a sprinkle of sea salt.

    1. Treat the same as the green variety.

      1. I like to roast them in the oven with a little olive oil and garlic, finish with a squeeze of lemon juice when done.

        1. Make sure you peel them first, outer layer is tougher than the green variety. Traditionally served with Hollandaise.

            When I was in Germany in the spring it was 'spargel' season (white asparagus). They were usually only prepared 2 ways, gently steamed as above with hollandaise or in soup. The soup was the most amazing I have had.
            I haven't tried it myself because the white asparagus looks so bad anytime it comes into my grocery store, and I assume at this time of year it has to be coming from the southern hemisphere, since it is a spring vegetable.
