Dill or Cilantro Latkes

I have mastered my Latke recipe but wanted to step it up a notch by adding fresh dill or cilantro. Will they burn or cause a bad taste if I chop the leaves and add to my mix. My alternative is to sprinkle the cilantro or dill on the latkes after I fry them. My second alternative is to make a sauce of mayo and dill or cilantro and use that for my latkes.
