can't say i have a real recipe. 6-7 potatoes, 2-3 eggs, 2 onions, salt and pepper, grate it all really well (i actually use an immersion blender to get it a really mushy-grated consistency), squeeze out liquid and fry in a bunch of hot oil. crispy on the edges, soft in the middle - just the way bubby made them

This is exactly the same recipe I learned to make as a child (except now I use a food processor to grate). The key is squeezing out the liquid before frying as described in the recipe. Simple and always delicious.
