Ideas needed for cocktail apps/munchies/canapes

I am hosting a cocktail party for all my girlfriends. They are extremely health conscious therefore I need to provide some extremely healthy choices for them to munch on. Other than a veggie tray with dip what else can I make or pick up that is prepared. I also want something substantial because we’ll be drinking quite a bit.

  1. Shrimp Cocktail, ceviche, pea pods with Boursin cheese piped inside, asparags spears wrapped with herbed goat cheese and prosciutto, olive tempenade with crostini, bruscetta with tomato/garlic/onion. Just a few to start.

    1. Frittata can be made healthily, plain unsalted almonds, caponata, use endive as a scoop for things you would normally use with chips, pico de gallo, gazpacho or another cold soup in little glasses, hummus, roasted vegetables, lettuce cups with a crab salad no mayo.

      1. Roasted kale chips
        Pickled vegetable tray (or mason jars if you want to be cute)
        Baba ghannouj and humus with baked pita chips
        Roasted beet and goat cheese squares
        Salmon tartare with sesame toasts

        1. Tiny crabcakes that are baked instead of fried

          Small peppers (jalapeno or milder if you prefer) stuffed with chevre, wrapped in a strip of prosciutto or serrano ham, broiled, drizzled w/OJ reduction or other fruity syrup

          Endive spears stuffed w:
          --smoked salmon tartare (I mix the chopped SS w/horseradish, lemon zest, chives) and dolloped w/creme fraiche, sour cream, or yogurt
          --crabmeat salad

          Crostini/bruschetti topped w:
          --wild mushrooms
          --sauteed greens (beet greens cooked with diced pancetta and garlic, then mixed w/grated parmigiano is delicious)

          Stuffed mushrooms (many filling possibilities, but you can make a spicy mixture of parsley, breadcrumbs, anchovies, lots of pepper, grated pecorino romano, a little OO--delicious)

          Big bowl of edamame sprinkled with smoked salt or some other interesting salt/spices
