I need a recipe for Jamaican saltfish fritters

My boyfriend asked me to make them. He says his mom made them before and they are nice. He likes Caribbean cuisine as his real dad is from Barbados so I guess it is in his genes to like it.
He told me to put lots of spring onions in them and he wants them hot.
I looked up some recipes but I am not convinced. He asked me to make Jamaican patties some days ago and all the recipes I found said to use minced beef; he hated them, saying they tasted of just curried mince and that the real ones are not made with mince, so I don't know if I should trust online recipes.
I have been soaking the saltfish for about 2 days now. Does it still need boiling? Can anyone give me an authentic recipe, considering the fritters are just for me and him?.
I don't wanna ask his mom how to make them because I don't like her so the less I deal with her the better :). Thanks in advance.

  1. Cook and cool the fish.
Shred it and mix it with cold mashed potatoes, sliced scallions, something spicy (like crushed red pepper, or minced fresh chiles), salt and pepper. Taste for seasoning.
    Shape into cakes and fry.
