Nothing fancy, and definitely not complicated!

    I have one called SOUP by Barbara Kafka, from which I got an incredibly simple technique for making chicken stock: just use chicken bones and water. It's got a lot of other info and recipes, including a good one for split pea soup.

      Kafka's book is fantastic. Most recipes are very simple and she's a rock star.

      I have Peterson's book too and he's a rock star but a bit more studious. A terrific book.

          12 Months of Monastery Soups. At least half are vegetarian, quite simple recipes, with heavy emphasis on seasonal ingredients.
