How would you make a jerked turkey sandwich?
I've got a whole turkey breast, marinated in Walkerswood jerk paste (marinade of the gods, by the way), slow-roasted and thin-sliced/shredded, and resting in its own spicy roasting juices. I want to make it into a bunch of sandwiches that do justice to the intense jerk flavor profile of allspice, clove and lime juice. These are not going to be a convenience food-type sandwich, so I am willing to go all out on a labor-intensive creation. I'm thinking of using a fresh bolilo roll, but I'm drawing a blank on vegetables, cheese and spreads. How would you put this sandwich together?
