Some Questions About Capons

Where could I get a Capon without pre-ordering?

Where would I be able to get an excellent Capon if I was able to order ahead?

I live in Center City, but don't recall seeing Capon in any of the stores I usually frequent.

Any special tips on stuffing/roasting for a succulent bird? Ie, temperature method that
works well for you.

Thanks much for any and all suggestions.

    Try Godshall's at the Reading Market.

      Last weekend at the Rittenhouse Sq. market the folks at Rineer farm tried to sell me their last capon (they know I'm a sucker for fun meats). So, I know they produce them. They're at Rittenhouse on Tuesdays and Saturdays and in Suburban Station on Thursdays.
