Sprinkling pistachio crumbles on coconut cookie...Yay or Nay?

I am making these coconut thumbprint cookies for Christmas this year : http://www.foodnetwork.com/recipes/in...

and I thought it would be nice to sprinkle some blended pistachios around the raspberry jam so that the red and green colors together would look festive.

This won't ruin the flavor, right? I know there are Middle Eastern pistachio-coconut sweets that are great, but I don't want to affect the coconut butter flavor in these cookies too much.

So yay or nay to the pistachio sprinkling?

  1. Sounds good to me. I like the combination of salty and sweet. Why not make a test cookie if the pistachio isn't getting mixed into the cookie dough?

      2. I know about the red/green thing but I think pistachio favor would go a lot better with the apricot jam option.

          Good point. Maybe I should just use a light sprinkling of green crystal sugar

            If you are wed to red and green, yes. But if you want best flavor, I'd use the apricot jam
            and pistachios. I'd also use half butter and half coconut oil to bump up the coconut flavor.

            But then I don't celebrate CHristmas, so the red and green thing is probably much more important to you than me ;)

              I'm giving some of them as gifts to my little cousins, so I thought those colors would be more fun/festive...then again, it would probably please me more than them!
