Microwaving to keep bread "fresh" and mold-free longer, and building a better microwave oven

This report on Microzap's new method of extending food freshness has many possibilities, including using brief microwaving at home to forestall spoilage of various foods (nuking milk to postpone souring is an old trick). They mention that the power in their oven is the same as in home models but theirs heats perfectly evenly. So it may be that fairly soon, we may be able to purchase microwave ovens that don't create hot and cold spots in our food.
