Butternut Squash in Fresh Green Curry by Nancie McDermott

Wow, now I know what to make in response to the "what to do with my butternut" question. Very delicious and easy to whip up after work. Even better the next day pureed into soup with some water and more coconut milk. Isn't very spicy with 2 fairly mild jalapenos - next time I'll add more heat.
