Hog's headcheese help! Tête fromagée, au secours!

I have inherited 3 hog's head from friends who have slaughtered this fall. If I make a ton of headcheese, can I freeze it? Will the gelatin still hold up after thawing?

Mes amis ont tué leur 3 cochons et j'ai les têtes. Pourrai-je congeler mon surplus de tête fromagée.?

    There is never enough good headcheese left over at my house to freeze. Seriously, headcheese can be frozen but should be defrosted in the refrigerator. I have frozen it up to two weeks (vacuuum sealed) without any noticeable change in flavor.
