Help with shortbread cookie molds please!
My aunt emailed me today to ask for help with a baking issue she is having. I am a terrible baker so I'm turning to my fellow CHers for help. She tells me that she bought some ceramic, pie-shaped shortbread molds (http://www.scottishgourmetusa.com/product/British-Isles-shortbread-pan-from-brown-bag-designs/scottish-shortbread-usa). They come with a very basic recipe, as follows:
1/2 c butter
1/3 cup powdered sugar
1/4 t vanilla
1 c flour
325, 30-35 min
My aunt says that she has tried 3 times now and the shortbread has either stuck in the buttered mold or crumbled to pieces. She's tried raising the oven temp. to 350 to no avail.
I watched a video (http://www.youtube.com/watch?v=Ca_4Sx...) and read a few things and it seems that hand mixing is the best way to combine ingredients. She had not hand-mixed previously. I also read that its important to slice into wedges after cooling for no more than 10 mins. to prevent cracking/breaking.
Does anyone have any experience with making these delicate little cookies? Any helpful advice for my poor, frustrated Aunt? Thanks in advance!
