Garnishes for Pan-Seared Foie Gras

Hey guys,

When I plate my pan-seared foie gras, what herb do I use as garnish? I'm doing a port wine and balsamic vinegar reduction with morello cherries.

  1. I might be in clined to not use an herb garnish on the seared foie in your case. Have a bit of sauce under the piece of foie, maybe, and/or drizzle a little on it and place some of the cherries on top. Place accompaniments like a just-barely-blanched baby leafy crunchy green veggie (how about baby bok choy) besides it...just off the top of my head...

    The herb on top in your first pic looks like chervil.
    The herb on top in your second pic looks like alfalfa sprouts, or maybe Kaiware sprouts.
    Not sure about the third, maybe another kind of sprout.
