Urgent question re Goins' kabocha soup

For those familiar with this soup ... I'm trying to buy the sherry for the soup and my options are:

$20 sherry from the proper wine store
$8 Madeira from the proper wine store
Cheap sherry from the bullet proof glass liquor store
Sherry vinegar (good quality)

What should I use?
