Eggs in stuffing?

The Librarian Nov 21, 2012 08:20 AM

I've never added a couple of beaten eggs to my cornbread stuffing, but lots of recipes call for them. What do people think? Does adding eggs contribute moisture and help keep the stuffing together? Thought I might try someting a little different this year. Thanks!

Both. I'd never consider omitting egg, as it makes for richer taste and mouth-feel.

I tend to add eggs to my stuffing.....as well as cream too. Think bread pudding....just savory, not sweet.
