i make tomato jam every year. My recipe isn't an exact thing and I don't use any type of jelling agent. I peel and coarsely chop the tomatoes. Then I add sugar til it tastes sweet, but not overpoweringly so. Then I add some cinnamon, cloves, and fresh ground ginger. I let this simmer on low heat all day, stirring occasionally so it doesn't stick. Once it reaches a thickness I like, I can it in 1/2 pint jars. It needs to be waterbathed for 10 minutes. One year I got wild and added some balsamic vinegar; it was yummy too.
