Chianti Salami

So I have some Volpi Chianti Salami (http://www.ditalia.com/Volpi-Chianti-...) in my fridge, so I figured I'd serve it as part of the apps on Thursday. I've purchased it for years at Trader Joe's, and now I'm in a Trader Joe's-less area, I found it at Cost Plus World Market. Is anybody familiar w/ this salami, and if yes, what cheese would be good with this? I used to always have it with some cheapo mozzarella but I'd like something a bit nicer for Thursday, but nothing too crazy price wise.

    I love a good dolce gorgonzola with salami. It sounds like an odd combo, but it is really tasty. Generally though, I would stick with a harder cheese like a pecorinio or provolone.

      Pecorino Toscano would be an excellent choice, as this cheese goes very well with Chianti.

        I like it with the jalapeno gouda also found at World Market. All of those Volpi wine salamis are pretty good, although there is a spicy soppresseta there (at WM) which is really good too. Surprisingly, I find their $9 "caviar" to be decent too but I don't have a lot of experience with caviar.

          Asiago or pecorino chunks would be nice. I like this salami a lot myself
          A glass of Montepulciano doesn't hurt either :)
