Leftover chicken recipes? Ideas?

I like buying rotisserie chickens for dinner on the occassions I'm looking for a quick no-mess dinner while on a frugal budget.

I prefer legs/thighs and the wings, so I am usually left with the breast meat, and some bits from the back. In the past, I have usually just cubed this to make chicken salad but getting bored with it.

Any other recipes or suggestions? Anything from basic to flavorful. Thanks!

    Chicken pot pie using fillo pastry.

        I like to use it for chicken enchiladas - either green, sour cream, or even ranchero. I also like to use it to make chicken and corn bread dressing. Just layer the chicken in with the soupy dressing. Once it is all baked up it is usually moister than it started out.

        Hubby likes to use it for soft tacos. With all the fixings.

              I've used left over rotisserie chicken to make a large pot pie, tastes great. I also use the carcass for stock.

                I make Ina Garten's Chicken Stew with biscuits, which is really a pot pie also. I cut time and use those refrigerator biscuits. Everyone inhales it and it's an easy week night meal.

                I use it for burritos, quesadillas, chicken tetrazzini, in tortellini soup, and in Mexican chicken and rice soup. Also curried chicken noodle casserole, flautas and chicken pot pie.

                  on the same theme, we use it to make chili, and to throw in pasta dishes (with a nice white wine sauce)
