Chocolate candy help

AnnieWilliams Nov 19, 2012 10:31 AM

I need to make a couple of molded chocolates to decorate a cake for Christmas. I am wondering if I can just take a bar of my favorite dark eating chocolate and gently melt it over a double boiler and fill the molds. I really don't want to use the candy wafers because those things are just gross. Anyway, I just wanted to make sure that the chocolate doesn't end up cloudy and streaky from being melted. I am also secretly hoping I don't have to temper it. It's a 3D squirrel mold for a buche in case anyone is wondering, LOL.

Thanks!

Yes you can use your favorite chocolate, but unless you temper it, the decorations will probably turn out cloudy. If you really don't want to temper, you can add a little paraffin wax - that will give you some shine.
