What to do with a brined, tied boneless turkey breast for Thanksgiving?

So.. Long story short: there will be a main bird, but a few of us eat Kosher. The 3lb-ish brined, tied boneless kosher turkey breast is for us.

Any ideas on what I could do with it?

    I don't really like things stuffed inside my meats, so on the rare occasions I've cooked one of these I just sear the outside and then finish roasting it in the oven.

      Untie it and butterfly the breast to an even thickness.....then fill with your favorite stuffing mix of dressing or vegetables, roll it back up and tie enclosing the ends. Roast as you normally would and brown the skin. You serve by making 3/4 to 1.0 inch slices. It looks great on a plate.

        Excellent idea. But if you do not trust your ability to butterfly and roll, just lay it flat, skin side up, on a cooling rack over a roasting pan that contains a mound of stuffing, and roast it at 450F that way. It will go very fast and the drippings will flavor the stuffing.

          I agree w/ this. Last year I made this "roulade" with a turkey breast since there was only 3 of us, and it was excellent. http://www.foodnetwork.com/recipes/in...
