I lived in Florida for 25 years -- and I'm in the KISS camp -- I usually just dust it with flour (to make a very light crust) and saute it for a few minutes -- if I don't grill it.
But I'll walk a mile for a fried grouper sandwich at a restaurant (I just don't deepfry much of anything at home).

I'm in Florida also, and the most usual grouper preparation is a sandwich on a large soft bun, with LTO, cheese optional, and the grouper grilled, blackened, or fried, your choice. If not served as a sandwich, sometimes I'll pan fry or grill it and top it with a Veracruz sauce, or fry grouper fingers dipped in a batter of flour, Guinness, and a bit of ancho chili powder.
