Low-Carb Stir Fry

I am trying to come up with low carb alternatives to help me stay on my diabetic diet. I am considering using bean sprouts as a replacement for the noodles in a stir fry. Anybody ever try this or have any suggestions?

  1. Shirataki ' noodles' ( most markets carry them, or find them in a health food store) or strips of suteeed zucchini. Also, you could name a plain, flat omelet and slice thinly.

    My friend does the low ctb thing and we ave fun omibg up with new ideas.

    1. Try grating some raw cauliflower and then steaming it briefly. Use that as a rice-substitute, either to serve the stir-fry on top of, or you can squeeze out the excess moisture and use it to make fried rice.
