Low-Carb Stir Fry

I am trying to come up with low carb alternatives to help me stay on my diabetic diet. I am considering using bean sprouts as a replacement for the noodles in a stir fry. Anybody ever try this or have any suggestions?

    Try grating some raw cauliflower and then steaming it briefly. Use that as a rice-substitute, either to serve the stir-fry on top of, or you can squeeze out the excess moisture and use it to make fried rice.

      Shirataki ' noodles' ( most markets carry them, or find them in a health food store) or strips of suteeed zucchini. Also, you could name a plain, flat omelet and slice thinly.

      My friend does the low ctb thing and we ave fun omibg up with new ideas.
