Spatchcocked Turkey > 12 lbs

Most of the guides I've seen suggest 10-12 lb birds, but I already bought a 16 lb bird. I'd still like to try this, but I don't think I can get a sheet large enough to handle the bird.

Would two sheets and plenty of foil help solve this problem?

  1. I spatchcocked my 16+ pounder last year and roasted it in a standard roasting pan without issue. It would have fit on a sheet pan as well, but a sheet pan isn't really deep enough to catch all the drippings. I'd use a roaster, or a foil roaster on top of a sheet pan.

    1. A 2-2.5 inch side shallow roasting pan or disposable foil pan with a sheetpan underneath will get the job done......this size is what is commonly used in commercial kitchens. They are known as full tray chafing pans or hotel pans. This is what I use for spatchcocked, or not, poultry, Prime Rib Roast or large Picnic/Fresh Ham....I use them in conjunction with a pangrate.
